  1. Heat the oil in a wide frying pan over a medium-high heat and add the beef mince in one layer. Leave it alone for three or four minutes before breaking it up. That undisturbed contact with the hot pan is where the browning happens, and browning is the one flavour a slow cooker cannot produce on its own.
  2. Break the meat into clumps and keep cooking until no pink remains and the bottom of the pan has gone brown, about eight minutes in total. Tip the mince into the slow cooker but leave the fat and the browned bits behind in the pan.
  3. Lower the heat to medium and cook the chopped onions in that same fat for five minutes, until soft and translucent. Scraping the pan as they release their moisture lifts the stuck-on beef residue, which is pure flavour you would otherwise throw away.
  4. Add the crushed garlic, chili powder, cumin, smoked paprika, oregano, salt and pepper to the onions and stir for one minute. Heating ground spices in fat before they meet liquid is what separates a chili that tastes of spice from one that tastes of dust; one minute is enough, and much longer will scorch them.
  5. Stir in the tomato purée and cook for a further two minutes, until it darkens from bright red to brick. This cooks off the raw tinned edge and concentrates the tomato flavour that carries the whole pot.
  6. Pour the beef stock into the pan, bring it to a simmer and scrape the base thoroughly with a wooden spoon until nothing is stuck. Tip the entire contents of the pan into the slow cooker over the mince.
  7. Add the chopped tomatoes with their juice and the drained kidney beans. Stir once to combine, then put the lid on. Do not add any further liquid: a slow cooker loses almost no steam, so whatever goes in stays in.
  8. Cook on low for 6 hours, or 3 to 4 hours on high if you are short of time. Low is better here because it gives the beans time to absorb the spices without collapsing into mush.
  9. Take the lid off for the final 30 minutes if the chili looks looser than you want. The surface liquid evaporates quickly once the seal is broken, and the pot thickens noticeably in that half hour.
  10. Taste and adjust the salt, which almost always needs a final pinch after six hours. Ladle into bowls and top each one with grated cheddar, a spoonful of soured cream and a scattering of sliced spring onions.

Recipe Variations

Three-bean. Replace one tin of kidney beans with black beans and add a drained tin of sweetcorn in the final hour, so the kernels keep their bite.

Chunky beef. Swap the mince for 900 g of chuck cut into 3 cm cubes, browned the same way, and cook for 8 hours on low instead of 6. The texture is closer to a stew.

Turkey. Turkey mince works but has almost no fat, so brown it in two tablespoons of oil and add a tin of chopped tomatoes less to keep the sauce from thinning.

Smoky and dark. Add a tablespoon of unsweetened cocoa powder and a teaspoon of instant coffee with the spices. Neither is detectable on its own; together they deepen the colour and the finish.

Vegetarian. Leave out the meat, use vegetable stock, and add a third tin of beans plus 250 g of chestnut mushrooms browned hard until they squeak.

Serving Ideas

Plain long-grain rice is the usual partner and the most forgiving, because it absorbs the sauce without competing with it. Baked potatoes split and filled with chili make a heavier meal out of the same pot, and a soft flour tortilla rolled around it turns four servings into eight.

Cornbread deserves its reputation here. The slight sweetness and the dry crumb work against the salt and the fat in a way that plain bread does not, and it is the one side worth baking specially.

Beyond the cheddar, soured cream and spring onions, the toppings that earn their place are the sharp ones: sliced pickled jalapeños, a squeeze of lime, chopped coriander, or diced raw red onion. Set them out in small bowls and let people build their own, which also means one pot satisfies both the cautious and the heat-seeking at the same table.

Keeping It Fresh

Cool the chili to room temperature within two hours, then refrigerate it in a sealed container for up to four days. It thickens as it chills and tastes noticeably better on day two, once the spices have had a night to settle into the beans.

It freezes extremely well, which is the main argument for making the full eight portions even for a small household. Freeze it in single or double portions, flat in bags so they stack and thaw quickly, for up to three months. Thaw overnight in the fridge rather than on the counter.

Reheat in a saucepan over a low heat with a tablespoon or two of water, stirring now and then until it steams throughout. The microwave works for a single bowl, but cover it and stir halfway, or the edges will overheat while the middle stays cold.

Can I put the mince in raw and skip the frying?

You can, and plenty of people do. The chili will still be good, but it will taste flatter and the meat will be greyish and softer in texture. Those fifteen minutes at the hob are the difference between a decent chili and a very good one.

My chili came out watery. What went wrong?

Almost always too much liquid at the start. Tinned tomatoes, beans and mince all release water, and the slow cooker traps the lot. Cook with the lid off for the last 30 to 45 minutes, or stir in a tablespoon of cornflour slaked in cold water.

Can I use dried kidney beans?

Only if you boil them hard for 10 minutes first. Raw kidney beans contain a toxin that slow cooker temperatures do not reliably destroy. Soak them overnight, boil for 10 minutes, drain, then add them at the start with 240 ml extra stock.

How spicy is this?

Mild. American chili powder is mostly ground mild chillies with cumin, garlic and oregano, so three tablespoons give depth rather than burn. For real heat, add a chopped jalapeño with the onions or half a teaspoon of cayenne with the spices.

Can I double the recipe?

Yes, if your cooker holds 6.5 litres or more and you fill it no higher than three-quarters. Keep the same timings; a fuller pot takes longer to come to temperature but reaches the same place by the six-hour mark.
